I have a confession to make… I don’t like coleslaw. Or at least I didn’t till I tried this! The mushy, vinegary coleslaw served at most restaurants has never appealed to me, and I had no desire to try making it at home. But the other day I was making my Slow Cooker Honey Barbecue Chicken Sandwiches, and I was brainstorming ways to jazz up the flavor and textures in the sandwich. (I can never leave well enough alone, can I?) The honey barbecue chicken is deliciously rich and flavorful, and I wanted something cold and refreshing that could balance some of the richness. Enter: coleslaw.

I came across this recipe from Our Best Bites, and I thought I’d give it a shot. I was blown away by how good it was and couldn’t believe I had been missing out on this my whole life! I made just a few adjustments to their recipe and came up my version of the perfect easy creamy coleslaw. It combines the simplicity of store-bought shredded cabbage with the fresh taste of grated carrots and an absolutely delicious dressing made with one very important key ingredient… celery seed. Seriously peeps, if you don’t already have some, go buy a bottle! This coleslaw recipe would not be the same without the incredible flavor that comes from the celery seeds! (You know, being the coleslaw connoisseur that I am and all… )

The coleslaw tastes fresh and creamy with the perfect bite from the vinegar and great texture from the grated carrots. When you pick up your shredded cabbage from the store, just make sure to grab the biggest shreds you can find so it will keep longer in the fridge without getting soggy.

The coleslaw makes a great side dish for all those Summer parties, but I enjoy it most on top of my Honey Barbecue Chicken Sandwiches! It adds such a bright, fresh taste to the deep barbecue flavor, and my family can’t get enough of it!

Add a handful of kettle chips, and you have yourself the perfect Summer meal! The barbecue chicken is made in the slow cooker, which is perfect because you don’t have to turn the oven on and heat up your house. You’ll thank me when it’s 100 degrees in the shade and your air conditioner is running non-stop! You can make the coleslaw ahead of time if you need to, but I like to keep it as fresh as possible. Remember, soggy coleslaw is a no-no! Make this just one time, and I promise you’ll be a coleslaw lover forever!

Easy Creamy Coleslaw
1 cup mayonnaise
2 Tablespoons Dijon mustard
2 Tablespoons apple cider vinegar
2 Tablespoons sugar
1 Tablespoon celery seed
1 Tablespoon grated onion
1/2 teaspoon kosher salt
one 16 ounce bag shredded cabbage with carrots
1 carrot, peeled and grated
In a large bowl combine the shredded cabbage and grated carrots. In another bowl, combine the mayonnaise, mustard, vinegar, sugar, celery seed, grated onion, and salt. Pour the mixture over the cabbage and toss until fully coated with the dressing. Refrigerate for 2-3 hours before serving and up to 2 days (or until coleslaw is soggy).

    Looks gorgeous! The only time I ever eat coleslaw is when it comes as a side at a barbecue restaurant. And it always is sub-par. But I can imagine I’ll be making this many times this summer! Thanks for the great recipe!

    Kim, thought I’d let you know I made you Honey BBQ this weekend for a party I had for my Mom’s 82nd birthday. It was a big hit. Everyone loved it. I was waiting for the coleslaw recipe you mentioned in the post last week but had to go with my regular recipe. I will make this next time. Thanks for the posting.

      You are definitely correct, eliminate the mustard ! And, I also add 1.5 tsp of sweet relish per every 1/4 of cabbage.

    I made this last night and it was really good! I didn’t have celery seed so I used dill (it’s what I had in the cupboard), and left out the mustard, added a little pepper and it was awesome! Would totally make again. I think the key is the grated onion. It added a richer flavor. Thanks for posting!

    I made this for my birthday bbq over pulled pork sandwiches and everyone loved it! My brother was even surprised at how good it was because he usually dislikes coleslaw. He said this wad the best coleslaw he’s ever had lol. Thanks for the recipe!

    Celery seed IS a must! I don’t make coleslaw without it! If you’ve had the publix slaw, it’s identical. I stick to main ingredients: cabbage, mayo, sour cream, celery seen, and a bit of milk. it’s simple and yummy!

    I’ve made this a couple a times and it’s always a big hit with my family! Quick and easy and we usually have everything except the coleslaw mix! The only thing we do different is we add some lemon juice (about half a lemon) to give it a bit more tang. ๐Ÿ™‚

    I just wanted to let you know that I made this coleslaw this summer with a southern pulled pork recipe. I had company from Australia and South Africa and it was a hit. Everyone loved it. They loved it so much that they wanted the pulled pork and coleslaw two nights in a row. Easy for me. Thank you for posting this coleslaw recipe. Love It.

    I just made this coleslaw this Saturday for a ladies event at my church and it was the perfect slaw for my Barbeque Chicken Sliders. The only changes I made was I used dried onion and only one tablespoon of Dijon mustard. Highly recommend this slaw , even just on the side with any dish would be so delish !!

    I pinned this and made it for dinner to go with my pulled pork sandwiches. I’ve never liked coleslaw but this recipe has turned me into a believer! I went home during my lunch break to put everything together and by the time dinner was ready it was crunchy, creamy and the perfect addition to the sandwiches. I didn’t have celery seed so I grated the tops of some celery stalks into the slaw and it tasted fantastic. Thanks for a deliciously simple recipe!

    Made this and really enjoyed it. Found it a wonderful complement to BBQ, which is what I was looking for. Made per directions, although I did add the juice of half a lemon for some extra acid. Great recipe, really good option and held up well over night (since I made it night before a lunch I was throwing).
